Smoothie bowl with cinnamon granola

Smoothie bowls are a great summer breakfast idea that can pack in nutrients, fruits, and veggies. This recipe contains beets, which are full of health-promoting vitamins, iron, folic acid and antioxidants. This root veggie may also be useful in increasing blood flow to fast-twitch muscle fibres, making this smoothie bowl a refreshing and runner friendly breakfast.
Ingredients
Granola:
- Chia seeds
- Water
- Oats
- Ground flax
- Hemp hearts (optional)
- Protein powder
- Cinnamon
- Coconut oil
- Maple syrup or honey
Smoothie:
- Frozen Banana
- Frozen strawberries
- Frozen cauliflower
- Cooked beet
- Milk or milk alternative
- Vanilla protein powder
Instructions
Granola:
Mix 3 tbs chia seeds and 9 tbs water. Set aside for 5 minutes
In a separate bowl mix together:
- 3 cups oats
- 1/4 cup ground flax
- 3 tbs hemp hearts (optional)
- 1 scoop protein
- 2-4 tsp cinnamon (depending on your taste, but my family likes a lot!)
- 2 tbs melted coconut oil
- 1/3 cup maple syrup or honey
- The chia “egg” mixture
Mix well and pour onto a lined baking sheet.
Press down flat and bake at 350* for 20-30 minutes.
Allow to cool completely before breaking the granola apart, you’ll get some nice, big clusters! Store granola in an airtight container.
Smoothie Bowl:
Blend 1 frozen Banana, 1/2 cup each of frozen strawberries and cauliflower, and 1/2 cooked beet with approximately 1/4 cup of milk or milk alternative.
Adding a scoop of vanilla protein powder is a great addition!
Pour smoothie mixture into a bowl and top with granola.
