Eda-Yummy Grain Bowl
Serves 4
- 1 cup Farm Boy™ Spicy Eda-Yummy Kale Dip or make your own (see recipe below)
- 1 ½ cups Farm Boy™ Organic Probiotic Yogurt
- 1-2 Tbsp fresh lemon juice, or to taste
- Salt to taste
- 1 pkg Farm Boy™ Basmati Rice, cooked
- 2 avocados, peeled, pitted and quartered
- ½ English cucumber, sliced
- 1 cup cherry tomatoes, halved
- 4 eggs
- 2 Tbsp Farm Boy™ Everything Bagel Seasoning Blend
- Fresh herbs for garnish
Spicy Eda-Yummy Kale Dip recipe
- 1 1/2 cups of unshelled edamame
- 1 cup fresh or frozen kale
- 1/2 a lemon
- 1/2 a jalapeno (cater to preference)
- 2 cloves of garlic
- 2 tbsp of olive oil
- Salt + pepper to taste
- 1 tbsp of water
Grain bowl instructions
- In a medium bowl, mix eda-yummy dip, yogurt, lemon juice and salt.
- Bring a small pot of water to a boil. Add eggs, cover and cook on low heat for 7 minutes.
- Cool in ice water and peel.
- Divide basmati rice amongst 4 bowls.
- Top with avocados, cucumber, tomatoes, and sliced eggs.
- Spoon some eda-yummy yogurt sauce on top.
- Sprinkle with bagel seasoning and garnish with herbs.
