Eda-Yummy Grain Bowl

Serves 4 

  • 1 cup Farm Boy™ Spicy Eda-Yummy Kale Dip or make your own (see recipe below)
  • 1 ½ cups Farm Boy™ Organic Probiotic Yogurt
  • 1-2 Tbsp fresh lemon juice, or to taste
  • Salt to taste
  • 1 pkg Farm Boy™ Basmati Rice, cooked
  • 2 avocados, peeled, pitted and quartered
  • ½ English cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 4 eggs
  • 2 Tbsp Farm Boy™ Everything Bagel Seasoning Blend
  • Fresh herbs for garnish

 

Spicy Eda-Yummy Kale Dip recipe

  • 1 1/2 cups of unshelled edamame
  • 1 cup fresh or frozen kale
  • 1/2 a lemon
  • 1/2 a jalapeno (cater to preference)
  • 2 cloves of garlic
  • 2 tbsp of olive oil
  • Salt + pepper to taste
  • 1 tbsp of water 

 

Grain bowl instructions

  1. In a medium bowl, mix eda-yummy dip, yogurt, lemon juice and salt.
  2. Bring a small pot of water to a boil. Add eggs, cover and cook on low heat for 7 minutes.
  3. Cool in ice water and peel.
  4. Divide basmati rice amongst 4 bowls.
  5. Top with avocados, cucumber, tomatoes, and sliced eggs.
  6. Spoon some eda-yummy yogurt sauce on top.
  7. Sprinkle with bagel seasoning and garnish with herbs.
