An easy and delicious vegan chocolate chip protein cookie

There are so many things that make this recipe great, it’s difficult to choose just one. With only six ingredients it’s easy to assemble, it’s ready in 10 minutes, it’s plant based, it’s an excellent post-run recovery snack, and it’s a single serving recipe, so you can have this healthy treat all to yourself!
Ingredients
- 1 tbsp nut or seed butter
- 2 tbsp applesauce
- 1/4 cup milk of choice
- 1 scoop vegan protein powder
- 3 tbsp oat flour
- vegan chocolate chunks to taste
Instructions
- Mix all of the ingredients in one small bowl.
- Scoop the mixture onto a lined baking sheet.
- Sprinkle the cookie with a couple of extra chocolate chunks and coarse sea salt.
- Bake 375 for 10 minutes.
Kristin highly recommends eating this treat while warm.
