Pick of the Week – Sweet Red Bell Peppers

Its flu/cold season and runners’ need to top up their nutrient status to run healthfully through the spring. Sweet red bell peppers are chock full of Vitamin C (even better than an orange!), carotenoids and Vitamin E – delivering a natural dose of anti-oxidants to help keep us in tip top shape. Choose peppers that are ripe – they should feel firm to the touch. You should be able to store them for up to a week in your refrigerator without losing much of their nutrient value. These crunchy, lightly sweet, watery veggies go well with hummus or Greek yogurt tzatziki and make a great pre or post workout snack!
