La l\u00e9g\u00e8ret\u00e9 des fruits de mer pr\u00e9sente un bon contraste avec les haricots, plus robustes, tandis que le jalape\u00f1o, le fenouil et la coriandre ajoutent du piquant. Le pain maison est parfait comme accompagnement, ou \u00e0 tremper dans le rago\u00fbt. Comme toujours la crevette rouge de culture durable de l\u2019Argentine et le brochet du lac Erie, de Whalesbone Supply, sont les \u00e9toiles du plat.\u00a0\u00bb<\/em><\/p>\n<p>La recette est une gracieuset\u00e9 de <a href=\"http:\/\/www.chefx.ca\">Chefx<\/a>.\u00a0 Pour en savoir davantage sur Chefx, allez voir notre chronique <a title=\"D\u00e9couvrir Ottawa \u2013 Chefx\" href=\"https:\/\/www.runottawa.ca\/fr\/decouvrir-ottawa-chefx\/\">D\u00e9couvrir Ottawa de ce mois-c<\/a>i.<\/p>\n<p>DIFFICULT\u00c9: Facile<\/p>\n<p>TEMPS ESTIM\u00c9\u00a0: 40\u00a0minutes<\/p>\n<p>INGR\u00c9DIENTS\u00a0:<\/p>\n<ul>\n<li>4 grosses crevettes, d\u00e9cortiqu\u00e9es et d\u00e9vein\u00e9es<\/li>\n<li>300 gr filet de brochet ou de bar sans la peau<\/li>\n<li>6 brins de coriandre<\/li>\n<li>2 brins de persil<\/li>\n<li>1 petite t\u00eate de fenouil<\/li>\n<li>1 citron<\/li>\n<li>1 petit oignon espagnol<\/li>\n<li>1 cube de bouillon de l\u00e9gumes biologiques<\/li>\n<li>400 gr haricots blancs<\/li>\n<li>1 1 petit poivron rouge grill\u00e9<\/li>\n<li>2\/3 tasse de tomates coup\u00e9es en d\u00e9s<\/li>\n<li>6 brins de safran<\/li>\n<li>3 c. \u00e0 table de vin blanc sec<\/li>\n<li>1 poivron jalape\u00f1o<\/li>\n<li>1 grosse gousse d\u2019ail<\/li>\n<li>1 demi-pain cro\u00fbt\u00e9 frais<\/li>\n<\/ul>\n<p>Instructions\u00a0:<\/p>\n<p>POUR COMMENCER<\/p>\n<ul>\n<li>Faire chauffer le four \u00e0 l\u2019avance \u00e0 350\u00b0F\/175\u00a0C.<\/li>\n<li>Mettre une bouilloire d\u2019eau sur le feu.<\/li>\n<li>Inspecter le poisson pour voir s\u2019il y reste des arr\u00eates.<\/li>\n<\/ul>\n<p>PR\u00c9PARER LES INGR\u00c9DIENTS<\/p>\n<ul>\n<li>Oignon\u00a0: hacher fin<\/li>\n<li>Ail\u00a0: \u00e9mincer<\/li>\n<li>Poivron Jalape\u00f1o (1\/3)\u00a0: \u00e9mincer<\/li>\n<li>Poivron rouge grill\u00e9\u00a0: hacher<\/li>\n<li>Citron\u00a0: extraire le zeste et le jus<\/li>\n<li>Fenouil\u00a0: \u00e9vider, puis hacher fin<\/li>\n<li>Persil (2 c. \u00e0 table)\u00a0: hacher<\/li>\n<li>Coriandre (2 c. \u00e0 table)\u00a0: hacher<\/li>\n<li>Poisson\u00a0: couper en bouch\u00e9es<\/li>\n<li>Bouillon de l\u00e9gumes\u00a0: faire dissoudre \u00bd cube dans 1 tasse d\u2019eau bouillante<\/li>\n<\/ul>\n<p>COMMENCER LE RAGO\u00dbT<\/p>\n<ul>\n<li>Dans un grand po\u00ealon (ou casserole) allant au four, faire chauffer 1 c. \u00e0 table d\u2019huile de canola \u00e0 feu \u00e9lev\u00e9. Ajouter l\u2019oignon, l\u2019ail le fenouil et le jalape\u00f1o et faire sauter pendant 3 minutes.<\/li>\n<li>Ajouter le vin blanc et le safran et porter \u00e0 \u00e9bullition.<\/li>\n<li>Ajouter les tomates et le poivron rouge grill\u00e9 et amener \u00e0 faible \u00e9bullition. R\u00e9duire le feu et continuer \u00e0 mijoter pendant 10 minutes.<\/li>\n<\/ul>\n<p>CONTINUER LE RAGO\u00dbT<\/p>\n<ul>\n<li>Ajouter les f\u00e8ves, le jus de citron et le zeste, 1\/3 tasse de bouillon de l\u00e9gumes et saler et poivrer au go\u00fbt. Laisser cuire 5 minutes. R\u00e9server le reste du bouillon, qui ne servira pas.<\/li>\n<\/ul>\n<p>AJOUTER LE POISSON ET METTRE AU FOUR<\/p>\n<ul>\n<li>Dans un bol \u00e0 m\u00e9langer, assaisonner les crevettes et le poisson et les crevettes avec 1 c. \u00e0 table d\u2019huile d\u2019olive, et saler et poivrer au go\u00fbt.<\/li>\n<li>Ajouter les crevettes et le poisson par-dessus le rago\u00fbt de f\u00e8ves, mettre au four et faire cuire jusqu\u2019\u00e0 ce que le poisson soit cuit de part en part (environ 10 minutes). (Alternativement, transf\u00e9rer le rago\u00fbt dans une casserole avant de mettre au four.)<\/li>\n<\/ul>\n<p>FINIR\/SERVIR<\/p>\n<ul>\n<li>Verser une louche de rago\u00fbt dans deux bols. Garnir avec le persil et la coriandre, et servir avec le pain cro\u00fbt\u00e9 en \u00e0-c\u00f4t\u00e9.
