Broccoli and Apple Salad

Our Farm Boy recipe simply calls this “Broccoli Salad”, but we thought it was a shame to leave apples out of the title. Oh, crispy fall apples, how we love you!

Now add raisins, salty feta cheese, sunflower seeds, and our green machine, broccoli. One cup of greens a day (see Beth’s #1 nutrition tip this month)? Toss with this light yogurty dressing (if you’re feeling wild, add a pinch of garlic) and we might just sit and eat the whole bowl!

Here’s what you need:

Salad:

  • 3 cups, broccoli florettes
  • 1 cup green onion, chopped
  • 1/4 cup sunflower seeds
  • 1/2 cup raisins
  • 1 cup apples, chopped
  • 1/2 cup feta cheese

Dressing:

  • 1/2 cup low fat yogurt
  • 1/2 cup low fat mayo
  • 2 tbsp honey
  • 2 tbsp lemon juice
  • Salt and pepper to taste

 

Here’s what you do:

  1. Cut broccoli into bite-sized pieces. Add chopped onions, sunflower seeds, chopped apples, raisins and feta cheese.
  2. Mix together ingredients for dressing and add to the salad. Refrigerate for 2 hours and serve.
