4 homemade gourmet popsicle combinations

Refreshing & hydrating, perfect option after a run! Try these fun combinations in your own kitchen.

 

1. Watermelon Mint Popsicle

Ingredients:

  • Fresh watermelon
  • Fresh mint

Method:

  • Cut watermelon into pieces.
  • Remove mint leaves from stems.
  • Blend together watermelon and mint until smooth.
  • Pour into popsicle molds and freeze – at least 4 hours.

 

2. Vietnamese Iced Coffee Popsicle

Ingredients:

  • Strong brewed coffee – 3 cups
  • Can of condensed milk
  • Heavy cream/whole milk – 1 cup

Method:

  • Blend together the hot coffee and condensed milk in a blender or a large heatproof bowl until evenly combined.
  • Whisk in the cream or milk, cover, and refrigerate until chilled, about 2 hours.
  • Pour into popsicle molds and freeze – at least 6 hours.

Pro tip: your popsicles will have less chance of being icy if they freeze quickly. If you can turn down the temperature of your freezer, you will have the best results!

 


3. Arnold Palmer Popsicle

Ingredients:

  • Farm Boy Organic Iced Black Tea
  • Farm Boy Organic Lemonade

Method:

  • Fill popsicle molds halfway with iced tea.
  • Freeze for 2 hours until firm, then fill remaining space with lemonade and add popsicle sticks.
  • Freeze – at least 3 hours.

 

4. Piña Colada Popsicle

Ingredients:

    • Whole cored pineapple
    • Farm Boy Organic Coconut Milk
    • Lime juice
    • Simple syrup – made by dissolving equal parts of sugar into water over heat.

Pro tip: if you have made popsicles before that get crystally or grainy – maybe it’s the sugar element you’ve included. Liquid sweeteners freeze more smoothly than just adding sugar to a mixture. Simple syrup is a good way to combat this!

Method:

    • Cut pineapple into chunks.
    • Blend together pineapple and coconut milk until very smooth.
    • Add lime juice and simple syrup to taste.
    • Add water if necessary to thin out the mixture so it is pourable.
    • Pour into popsicle molds and freeze – at least 6 hours.
