Recovery fuel: an easy homemade falafel recipe

Chickpeas are a great way to fuel your day. They are a rich source of fibre, and also vitamins A, E, and C, folate, magnesium, potassium, iron. Additionally, this high in protein legume makes an excellent substitution for animal protein in many vegetarian and vegan dishes.

Ingredients:

2 cups of cold chickpeas, rinsed and drained 

2 cups frozen kale 

(these ingredients being cold are key!)

Handful of cilantro

Juice from 1/2 a lemon 

3-4tbs ground flax 

Dash of garlic, salt and cumin

Instructions:

Mix all ingredients in a food processor 

Tightly roll into balls

Bake at 375 for 20-25 minutes

Flip over after 10 minutes

Serve with pita bread, on a sandwich, salad or rice
